  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 1 tablespoon brown sugar
  • 4 cups all-purpose flour (plus extra for dusting)
  • 2 teaspoons fine sea salt
  • 4 tablespoons unsalted butter, melted (plus more for brushing)
  • ⅓ cup baking soda
  • Coarse sea salt or pretzel salt (for sprinkling)
  • 2 tablespoons unsalted butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk, warm
  • ½ cup beer (lager or pilsner)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and brown sugar. Sprinkle yeast on top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add remaining 2 cups of flour. Turn out onto a floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Lightly oil the bowl, place dough back in, and turn to coat. Cover with a towel and let rise in a warm spot for 45-60 minutes until doubled.
  4. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring a large pot of water (about 8 cups) to a rolling boil, then carefully add baking soda. Reduce heat to a simmer.
  5. Shape the bites: Punch down dough and turn out onto a floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces.
  6. Boil the bites: Working in batches of 8-10, drop bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with slotted spoon and place on prepared baking sheet.
  7. Add the salt: While still damp, sprinkle generously with coarse sea salt.
  8. Bake: Bake for 12-15 minutes until deep golden brown, rotating pan halfway through.
  9. Finish with butter: As soon as they come out of the oven, brush hot pretzel bites with melted butter.
  10. Make the dip: While bites are baking, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in warm milk, whisking constantly, then add beer. Continue whisking until thickened, about 3-4 minutes. Reduce heat to low and gradually add shredded cheddar, stirring until melted. Stir in Dijon mustard, garlic powder, and cayenne. Season with salt and pepper. Keep warm.

Don’t skip the boiling step; it’s essential for the authentic pretzel texture. Shred your own cheese for a smooth dip. For the beer, use a lager or pilsner; avoid IPAs as they can turn bitter.
