Ingredients

Scale
  • 68 medium ripe peaches, peeled and sliced
  • 2 tablespoons bourbon (optional, can substitute with vanilla extract)
  • 3/4 cup granulated sugar (for peaches)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch
  • 1 cup all-purpose flour (for batter)
  • 1/4 cup granulated sugar (for batter)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (for batter)
  • 6 tablespoons unsalted butter, melted and slightly cooled (for batter)
  • 1/2 cup whole milk (or almond milk for dairy-free)
  • 1/2 cup all-purpose flour (for crumble topping)
  • 1/2 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt (for crumble topping)
  • 6 tablespoons unsalted butter, cold and cubed (for crumble topping)

Instructions

  1. Preheat oven to 350°F (175°C). Peel and slice peaches, then toss with 3/4 cup granulated sugar, bourbon, lemon juice, and cornstarch until well coated. Set aside for about 10 minutes.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt for the batter. Slowly stir in melted butter and milk until smooth and thick, about 5 minutes.
  3. Pour batter into a greased 9×9-inch baking dish and spread evenly. Spoon peach mixture over batter without stirring.
  4. In a small bowl, combine flour, brown sugar, cinnamon, and salt for the crumble topping. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs, about 5 minutes.
  5. Sprinkle the cinnamon crumble evenly over the peaches.
  6. Bake for 45-50 minutes until topping is golden brown and peach filling is bubbly. If topping browns too quickly, cover loosely with foil halfway through baking.
  7. Let cobbler cool for 15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Use cold butter for the crumble topping to achieve a crisp texture. If topping browns too fast, cover with foil halfway through baking. Frozen peaches can be used if thawed and drained well. For gluten-free, substitute with gluten-free flour blends. For vegan, use coconut oil or vegan margarine and plant-based milk, and omit bourbon or use vanilla essence.
