  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • ¼ teaspoon ground nutmeg (for coating)
  • 3 tablespoons melted butter (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin pan thoroughly with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, cornstarch, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Whisk for about 20 seconds.
  3. In a separate medium bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, egg, melted butter, buttermilk, and vanilla extract until smooth and well combined.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently just until no streaks of flour remain (about 12 to 15 strokes). A few small lumps are fine.
  5. Use a cookie scoop or piping bag to fill each mini muffin cup about ¾ full.
  6. Bake for 10 to 12 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Let the donut holes cool in the pan for exactly 2 minutes.
  8. While the donuts are cooling, melt the 3 tablespoons of butter in a small bowl. In a separate shallow bowl, mix together the granulated sugar, cinnamon, and nutmeg for the coating.
  9. Working one at a time, use a fork to gently lift each warm donut hole out of the pan. Brush it all over with melted butter, then drop it into the cinnamon sugar mixture and roll to coat completely. Transfer to a cooling rack.
  10. Serve immediately. These are best eaten warm, within about 30 minutes of coating.

Notes

Don’t overfill the muffin cups; ¾ full is perfect. Make sure your baking powder is fresh. Work quickly when coating to ensure the sugar sticks. For make-ahead, bake the donut holes a day ahead, store uncoated, then reheat and coat before serving.
