Instructions

  1. Preheat oven to 375°F (190°C). Butter or lightly grease a 9×13-inch baking dish.
  2. In a large bowl, gently toss peeled and sliced peaches with 3/4 cup sugar, 1 teaspoon cinnamon, 1 tablespoon lemon juice, and 3 tablespoons flour. Set aside for 10 minutes to macerate.
  3. In a medium bowl, whisk together 2 cups flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in cold butter using a pastry cutter, fork, or fingertips until mixture resembles coarse crumbs with some pea-sized pieces.
  5. Add buttermilk and vanilla extract (if using) to the flour mixture. Stir gently just until combined; dough will be sticky and lumpy.
