Instructions

  1. In a large pot, melt 2 tablespoons unsalted butter over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until vegetables soften and onion turns translucent.
  2. Stir in minced garlic, dried thyme, and dried parsley. Cook for another minute until fragrant, being careful not to burn the garlic.
  3. Pour in chicken broth and water, then bring to a gentle boil. Add shredded chicken, reduce heat to a simmer, and cook uncovered for 10 minutes to meld flavors.
  4. While broth simmers, whisk together flour, baking powder, and salt in a mixing bowl. Stir in milk and melted butter until just combined; do not overmix.
  5. Drop spoonfuls (about 2 tablespoons each) of dumpling dough onto the simmering broth surface, leaving space between each. Avoid stirring after adding dumplings.
  6. Cover the pot with a tight-fitting lid and simmer gently for 15 minutes. Test dumplings by poking with a fork to ensure they are soft and cooked through.
  7. Taste broth and adjust seasoning with salt and pepper if needed. Stir gently to combine before serving.
