Cozy Homemade Pumpkin Chai Latte with Oat Milk

A quick and easy homemade pumpkin chai latte made with real pumpkin puree, chai tea, and oat milk. This cozy drink comes together in under 10 minutes and tastes better than any coffee shop version.

  • 1 cup (240 ml) oat milk (barista blend preferred)
  • ½ cup (120 ml) strong brewed chai tea (2 chai tea bags steeped in hot water for 5 minutes)
  • 2 tablespoons (30 g) pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 12 tablespoons (1530 ml) maple syrup
  • ½ teaspoon (2.5 ml) vanilla extract (pure vanilla)
  • ½ teaspoon (1 g) pumpkin pie spice
  • ¼ teaspoon (0.5 g) cinnamon
  • Pinch of salt
  • Optional toppings: whipped cream, extra cinnamon or pumpkin pie spice, cinnamon stick

Instructions

  1. Brew the chai tea: Bring ½ cup of water to a boil. Pour it over 2 chai tea bags in a small mug or heatproof cup. Let it steep for 5 minutes. Remove the tea bags and squeeze them gently to get all the flavor out. Set the strong chai concentrate aside.
  2. Combine the pumpkin mixture: In a small saucepan, whisk together 2 tablespoons of pumpkin puree, 1-2 tablespoons of maple syrup, ½ teaspoon of vanilla extract, ½ teaspoon of pumpkin pie spice, ¼ teaspoon of cinnamon, and a pinch of salt. Whisk until it forms a smooth paste with no lumps (about 30 seconds).
  3. Add the oat milk: Pour 1 cup of oat milk into the saucepan with the pumpkin mixture. Whisk continuously as you heat it over medium heat. Do not let it boil. Heat until it’s steaming and hot to the touch, about 2-3 minutes. Small bubbles should form around the edges but no rolling boil.
  4. Froth the milk: If you have a milk frother, use it directly in the saucepan for about 15-20 seconds until the milk is foamy and doubled in volume. If you don’t have a frother, pour the hot milk mixture into a jar, seal it, and shake vigorously for 30 seconds (be careful, the jar will be hot).
  5. Combine and serve: Pour the brewed chai concentrate into your favorite mug. Slowly pour the frothed pumpkin oat milk over the chai. The foam will rise to the top naturally. Give it a gentle stir if you want the flavors fully combined, or leave it layered for a prettier presentation.
  6. Top and enjoy: Add whipped cream if desired. Dust with extra cinnamon or pumpkin pie spice. Serve immediately while it’s hot and frothy.

Notes

Don’t boil the oat milk or it will separate. Whisk the pumpkin into a paste first to avoid lumps. Use room temperature ingredients for best results. The pumpkin-oat milk mixture can be stored in the refrigerator for up to 3 days. Clean the saucepan immediately after use as pumpkin puree dries like cement.
