Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken breast
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup (240ml) heavy cream
  • 4 cups (960ml) low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh lemon juice
  • ½ cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons butter
  • ¼ cup fresh parsley, chopped, for garnish
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients: dice onion, mince garlic, chop sun-dried tomatoes, grate Parmesan. Pat chicken dry and season with salt and pepper.
  2. In a large Dutch oven over medium heat, melt butter. Add onion and cook 4-5 minutes until soft and translucent. Add garlic and cook 1-2 minutes until fragrant.
  3. Push aromatics to the sides, add chicken breasts in a single layer. Cook 4-5 minutes per side until golden brown (not fully cooked through).
  4. Pour in chicken broth, scraping up browned bits. Add sun-dried tomatoes, thyme, oregano, and red pepper flakes. Stir.
  5. Bring to a gentle boil, then reduce heat to low, cover, and simmer 15 minutes until chicken is cooked through (165°F/74°C).
  6. Remove chicken, shred with two forks into bite-sized pieces. Return to pot.
  7. Reduce heat to low. Stir in heavy cream and Parmesan until melted and smooth. Do not boil.
  8. Stir in lemon juice. Adjust salt and pepper to taste.
  9. Ladle into bowls, garnish with parsley and extra Parmesan. Serve hot with crusty bread.

Notes

Don’t rush the onion sauté; let them soften for 5 minutes. Season in layers. Let cream come to room temperature before adding to prevent curdling. Use fresh Parmesan for best melting. Don’t skip the lemon juice. Let soup rest 5-10 minutes before serving for best flavor.
