This cozy one-pot lasagna soup with ricotta dollops is proof that sometimes the shortcut is actually the better path. It’s lasagna without the stress, and honestly, it tastes better.

Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 preferred)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 oz / 800g) crushed tomatoes (San Marzano preferred)
  • 2 tablespoons tomato paste
  • 4 cups (960ml) chicken or beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 8–10 lasagna noodles, broken into 2-inch pieces
  • 1 cup (250g) whole milk ricotta cheese
  • ½ cup fresh mozzarella, shredded
  • Fresh basil, a handful, torn
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Brown the beef: Heat 2 tablespoons olive oil in a large pot over medium-high heat. Add ground beef and cook, breaking it apart, until well browned (6-8 minutes).
  2. Sauté aromatics: Add diced onion and cook 3-4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  3. Build the broth: Stir in tomato paste and cook 1 minute. Add crushed tomatoes, broth, oregano, basil, red pepper flakes, salt, and pepper. Bring to a gentle boil.
  4. Add noodles: Reduce heat to a simmer. Add broken lasagna noodles, stir to submerge. Cook 10-12 minutes, stirring occasionally, until tender but al dente.
  5. Check seasoning: Taste and adjust salt and pepper. If too thick, add a splash of broth; if too thin, simmer uncovered a few more minutes.
  6. Prepare ricotta dollops: In a small bowl, mix ricotta with a pinch of salt and black pepper.
  7. Serve: Ladle soup into bowls. Top each with a dollop of seasoned ricotta, shredded mozzarella, and torn basil. Serve immediately with crusty bread.

Notes

Don’t let the soup sit too long before serving; noodles absorb liquid and soften. For leftovers, store broth and noodles separately. Always dollop ricotta on top, never stir into the pot. Use whole milk ricotta to avoid graininess.
