Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and diced (about 1 cup)
  • 3 celery stalks, diced (about 1 cup)
  • 4 cloves garlic, minced
  • ½ cup dry white wine (optional, use Sauvignon Blanc or Pinot Grigio)
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 (2-3 pound) rotisserie chicken, skin removed, meat shredded
  • 8 ounces wide egg noodles
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of ½ lemon

Instructions

  1. Prep the Chicken: Shred the rotisserie chicken, removing skin and bones, to get about 4 cups of shredded chicken. Set aside.
  2. Sauté the Aromatics: In a large Dutch oven, melt butter over medium heat. Add onion, carrots, and celery. Cook, stirring occasionally, for 8-10 minutes until softened and onion is translucent.
  3. Add the Garlic: Add minced garlic and cook for 1 minute until fragrant.
  4. Deglaze the Pot: Pour in white wine and scrape up browned bits from the bottom. Let simmer for 2-3 minutes until mostly reduced.
  5. Add the Broth and Seasonings: Add chicken broth, water, thyme, rosemary, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Cook the Noodles: Uncover and bring soup back to a gentle boil. Add egg noodles and cook according to package directions (about 8-10 minutes) until al dente.
  7. Add the Chicken: Reduce heat to low and stir in shredded chicken. Warm through for 2-3 minutes.
  8. Finish and Season: Remove bay leaf. Stir in parsley and lemon juice. Season with salt and pepper to taste.
  9. Serve: Ladle into bowls and garnish with extra parsley and black pepper if desired.

Notes

For leftovers, cook noodles separately and add to individual bowls to prevent them from absorbing broth and becoming mushy. Shred chicken while warm for easier handling. Don’t skip the lemon juice—it brightens the soup. Let soup rest 10-15 minutes off heat for flavors to meld.
