  • 3 to 4 pounds beef chuck roast (well-marbled)
  • 4 large carrots, peeled and cut into 2-inch pieces
  • 4 medium russet potatoes, peeled and quartered
  • 1 large yellow onion, sliced thick
  • 4 cloves garlic, minced
  • 2 cups beef broth (preferably low-sodium)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Optional: 2 celery stalks, chopped
  • Optional: 2 bay leaves

Instructions

  1. Peel and cut the carrots into 2-inch chunks and quarter the potatoes. Slice the onion thickly and mince the garlic. Set aside.
  2. Pat the chuck roast dry with paper towels. Generously season both sides with salt and black pepper.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When shimmering, add the beef and sear each side for about 3-4 minutes until browned.
  4. Place the sliced onions, carrots, and potatoes at the bottom of the slow cooker. If using celery and bay leaves, add them now.
  5. Place the seared chuck roast on top of the vegetables.
  6. In a small bowl, whisk together beef broth, Worcestershire sauce, tomato paste, minced garlic, and dried thyme.
  7. Pour the broth mixture evenly over the roast and vegetables.
  8. Cover and set the slow cooker to low. Cook for 7 to 8 hours until the roast is fork-tender and the vegetables are soft but not mushy.
  9. About 30 minutes before the end, check seasoning and adjust salt and pepper if needed. For a thicker gravy, remove the meat and veggies, pour the liquid into a saucepan, and simmer until reduced.

Searing the beef before slow cooking adds rich flavor and locks in juices. Cut vegetables into uniform pieces to ensure even cooking. Keep the slow cooker on low for best tenderness.
