  • 6 large eggs, hard-boiled and peeled
  • 3 tablespoons mayonnaise (Hellmann’s or Dukes preferred)
  • 1 teaspoon yellow mustard (or Dijon for sharper flavor)
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon paprika (smoked or sweet), plus more for garnish
  • 12 pitted black olives (large, plump ones for spider bodies)
  • 12 additional pitted black olives, sliced lengthwise into thin strips (for spider legs)

Instructions

  1. Hard-Boil the Eggs: Place 6 eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes. Meanwhile, prepare an ice bath. After 12 minutes, transfer eggs to the ice bath and cool for at least 5 minutes.
  2. Peel and Halve the Eggs: Gently tap each egg on the counter to crack the shell all over. Roll between hands to loosen, then peel under running cold water. Pat dry. Slice each egg in half lengthwise with a sharp knife. Pop yolks into a small mixing bowl. Arrange white halves on a serving platter, cut-side up. If they wobble, slice a tiny sliver off the bottom to make them sit flat.
  3. Make the Filling: Add 3 tablespoons mayonnaise, 1 teaspoon yellow mustard, 1/2 teaspoon white vinegar, 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/2 teaspoon paprika to the bowl with yolks. Mash together with a fork until smooth and creamy. Taste and adjust seasoning as desired.
  4. Fill the Egg Whites: Spoon yolk mixture into a piping bag fitted with a star tip, or into a zip-top bag with a corner snipped off. Pipe filling into each egg white half, mounding slightly in the center. Alternatively, use a small spoon.
  5. Create the Spider Webs: Sprinkle a light, even dusting of paprika over the filled eggs. Using a toothpick, gently drag the paprika from the center outward in a spiral motion to create a web-like pattern. If it smudges, dust more paprika and try again.
  6. Make the Spiders: Take 12 whole pitted black olives (spider bodies). Slice 12 additional olives lengthwise into thin strips. Arrange 4 to 6 olive strips on top of each filled egg white, radiating outward like legs. Gently press one whole olive body on top of the legs in the center.
  7. Chill and Serve: Cover platter loosely with plastic wrap and refrigerate for at least 30 minutes. Serve cold, straight from the fridge. Best enjoyed within a few hours of making.

Notes

Use older eggs (1-2 weeks old) for easier peeling. Don’t overmix the filling; a slightly chunky texture helps the olive legs stick. Boil and peel eggs a day ahead if desired, but fill and decorate no more than 4-6 hours before serving. For dairy-free, use vegan mayonnaise. For a lighter version, swap half the mayo with plain Greek yogurt. Store leftovers in an airtight container in the fridge for up to 2 days; place a damp paper towel over the eggs to prevent drying. Do not freeze.
