Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 poblano pepper, seeded and diced
  • 1 jalapeño, seeded and minced (optional)
  • 4 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cut into cubes
  • 1 cup heavy cream or half-and-half
  • 3 cups cooked shredded chicken
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (15 ounces) white corn, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack or cheddar cheese (for garnish)
  • Sliced avocado (for garnish)
  • Tortilla chips or strips (for garnish)
  • Sour cream or extra cream cheese (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic, diced poblano, and jalapeño (if using). Cook for 1 minute until fragrant.
  2. Pour in chicken broth and bring to a gentle simmer. Scrape up any browned bits from the bottom. Simmer for 3-4 minutes.
  3. Reduce heat to low. Add cubed cream cheese, stirring constantly until completely melted (3-5 minutes). Slowly pour in heavy cream while stirring.
  4. Stir in shredded chicken, drained cannellini beans, white corn, cumin, oregano, chili powder, smoked paprika, salt, and pepper. Increase heat to medium-low and bring to a gentle simmer. Cook for 8-10 minutes, stirring occasionally.
  5. Remove from heat. Stir in lime juice. Let rest for 2-3 minutes before serving. Ladle into bowls and garnish as desired.

Notes

For best texture, let cream cheese sit at room temperature for 20 minutes before cubing. Do not boil after adding cream cheese to avoid graininess. Shred rotisserie chicken while warm for tender shreds. Chili tastes even better the next day.
