A quick and easy creamy buffalo chicken dip made in a skillet in just 15 minutes. Perfect for game day, parties, or any gathering, this dip is rich, spicy, and utterly addictive.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup sour cream
  • 2 cups cooked chicken, shredded or finely chopped (rotisserie chicken works well)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • Celery sticks, carrot sticks, tortilla chips, or crusty bread for serving (optional)
  • Blue cheese crumbles for garnish (optional)
  • Green onions, sliced thinly for garnish (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting, or microwave in 10-second bursts until soft but not melted.
  2. Heat a large skillet over medium heat. Add softened cream cheese, buffalo hot sauce, ranch dressing, and sour cream. Stir continuously until melted and smooth, about 3-4 minutes.
  3. Fold in shredded chicken, ensuring it’s coated in sauce. Cook for 2 minutes, stirring occasionally, until heated through.
  4. Reserve 1/4 cup shredded cheddar for topping. Add remaining cheddar and all mozzarella to skillet. Stir until fully melted and dip is thick and creamy, about 2 minutes.
  5. Sprinkle reserved cheddar over top. Cover skillet with lid or foil and let sit 1-2 minutes until cheese on top is melted. Garnish with green onions and blue cheese crumbles if desired.
  6. Serve immediately with celery sticks, carrot sticks, tortilla chips, or crusty bread.

Notes

For best texture, use full-fat cream cheese and shred cheese from a block. Adjust heat by varying hot sauce amount. Dip can be made ahead and reheated. Not recommended for freezing.
