  • 2 cups cooked shredded chicken (about 300g) – rotisserie chicken recommended
  • 8 oz cream cheese, softened (225g, full-fat preferred)
  • 1 tablespoon ranch seasoning mix
  • 1/2 cup buffalo hot sauce (120ml), e.g., Frank’s RedHot
  • 1 cup shredded cheddar cheese (110g)
  • 1/2 cup shredded mozzarella cheese (55g)
  • 1/2 teaspoon garlic powder
  • 2 tablespoons sliced green onions (for garnish)
  • Optional: 1/4 cup crumbled blue cheese (30g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese, ranch seasoning, garlic powder, and buffalo hot sauce. Mix with a spatula until smooth and creamy, about 2-3 minutes.
  3. Stir in shredded chicken, shredded cheddar, and mozzarella cheeses. If using blue cheese, fold it in now.
  4. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and spread evenly.
  5. Bake uncovered for 20-25 minutes until the top is bubbling and golden at the edges. Optionally, broil for 2-3 minutes for a golden crust, watching closely to avoid burning.
  6. Remove from oven and let cool for 5 minutes to thicken.
  7. Garnish with sliced green onions before serving.

Notes

If cream cheese is not softened, leave it at room temperature for 30 minutes before mixing to avoid lumps. Shredding your own cheese melts better than pre-shredded. For less heat, reduce buffalo sauce and add extra cheese. Leftovers should be cooled completely before refrigerating and reheated gently to maintain texture. A cast-iron skillet can be used as an alternative baking dish.
