  • 1 lb ground beef (80/20 recommended)
  • 4 medium russet potatoes, peeled and diced into ½-inch cubes
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 4 cups low-sodium beef broth
  • Salt and pepper to taste
  • Optional toppings: diced pickles, crispy bacon bits, chopped green onions, extra shredded cheese, sour cream

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until browned and no longer pink (about 6-8 minutes). Drain off excess fat.
  2. While the beef cooks, peel and dice the russet potatoes into ½-inch cubes. Rinse in cold water to remove excess starch, then drain well.
  3. Layer the diced potatoes in the bottom of a 6-quart or larger slow cooker. Top with the browned ground beef. Pour the beef broth over everything. Do not stir.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  5. Cut the softened cream cheese into cubes and stir it into the hot soup until fully incorporated and smooth.
  6. Add the shredded cheddar cheese a handful at a time, stirring after each addition, until completely melted and smooth.
  7. Taste and season with salt and pepper as needed. For a tangy flavor, stir in 1 tablespoon pickle juice or a squirt of mustard if desired.
  8. If the soup is too thin, mash a few potato cubes against the side of the crockpot or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cook for 10 more minutes.
  9. Ladle into bowls and top with desired toppings. Serve immediately.

Notes

For best results, use full-fat cream cheese and freshly shredded cheddar cheese. Add dairy at the end of cooking to prevent curdling. Let cream cheese come to room temperature before adding. Brown the beef well for maximum flavor. The soup thickens as it sits; add a splash of broth when reheating.
