This creamy honeynut squash soup is a budget-friendly, quick, and easy meal that’s perfect for picky eaters. Roasting the squash concentrates its natural sweetness, creating a rich, comforting soup that reheats beautifully and is naturally gluten-free, dairy-free, and vegan.

Ingredients

Scale
  • 3 medium honeynut squash (about 2 pounds total)
  • 1 large yellow onion, roughly chopped
  • 4–5 garlic cloves, smashed
  • 3 tablespoons olive oil
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • Salt and black pepper to taste
  • Optional toppings: toasted pumpkin seeds, coconut milk drizzle, fresh thyme, crumbled bacon

Instructions

  1. Preheat oven to 400°F (200°C). Wash honeynut squash thoroughly and pat dry. Do not peel.
  2. Cut each squash in half lengthwise. Scoop out seeds and stringy pulp.
  3. Arrange squash halves cut-side up on a rimmed baking sheet. Drizzle with 2 tablespoons olive oil and sprinkle with salt. Rub oil into cut surfaces. Add smashed garlic cloves (skins on) to the baking sheet.
  4. Roast for 30-35 minutes until squash is tender when pierced with a fork. Let cool for 5-10 minutes.
  5. While squash roasts, heat remaining 1 tablespoon olive oil in a large pot over medium heat. Add chopped onion and cook for 6-8 minutes until translucent and starting to brown.
  6. Once squash is cool enough to handle, add whole roasted squash halves (skin and all) to the pot. Squeeze roasted garlic cloves out of their skins and add to pot.
  7. Add vegetable broth to the pot and bring to a simmer over medium-high heat. Reduce heat to medium-low and cook for 10 minutes.
  8. Remove pot from heat. Using an immersion blender, blend soup directly in pot until completely smooth. (If using a regular blender, blend in batches, leaving lid slightly ajar to release steam.)
  9. Return blended soup to pot over low heat. Stir in coconut milk, maple syrup (if using), ground ginger, and cinnamon. Season with salt and pepper to taste. Simmer for 5 more minutes, stirring occasionally.
  10. Taste and adjust seasoning. Ladle into bowls and add desired toppings.

Notes

Don’t skip the roasting step—it’s essential for deep, caramelized flavor. Season in layers by adding salt at each stage. Be careful when blending hot liquids; always vent the lid. The soup tastes even better the next day. For a thicker soup, start with 3 cups of broth and add more as needed. For a thinner soup, add an extra half cup of broth or water.
