A quick and easy creamy chicken dish with a rich sun-dried tomato sauce that is perfect for cozy dinners and crowd-pleasing meals.

  • 4 boneless, skinless chicken breasts (about 6 oz or 170 g each), trimmed and pounded slightly
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup (240 ml) chicken broth, homemade or low-sodium
  • 1 cup (240 ml) heavy cream (full-fat preferred)
  • ½ cup freshly grated Parmesan cheese
  • A handful fresh basil, chopped
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Gently pound the breasts to about ½ inch (1.3 cm) thickness for even cooking, about 5 minutes.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. Once hot, add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside on a warm plate.
  3. Reduce heat to medium. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir often for 1-2 minutes until fragrant but not burnt.
  4. Pour in 1 cup chicken broth to deglaze the pan, scraping up brown bits. Let simmer for 2-3 minutes to reduce slightly.
  5. Stir in 1 cup heavy cream and bring to a gentle simmer. Add ½ cup grated Parmesan cheese, stirring until melted and sauce thickens slightly. Avoid boiling to prevent cream from splitting.
  6. Return chicken breasts to the pan, nestling them into the sauce. Simmer together for 3-5 minutes to meld flavors and keep chicken juicy. Add a pinch of red pepper flakes if desired.
  7. Just before serving, stir in or sprinkle chopped fresh basil as garnish.

Notes

If sun-dried tomatoes are dry, soak in warm water for 10 minutes before chopping. Use fresh garlic for best flavor. Avoid boiling the cream to prevent curdling. Adjust seasoning at the end due to saltiness from Parmesan and tomatoes. For dairy-free version, substitute heavy cream with coconut milk and Parmesan with nutritional yeast or dairy-free cheese.
