These creamy overnight peanut butter banana oats are a quick and easy breakfast that tastes like dessert. With just five minutes of prep, you can enjoy a delicious, no-cook meal that keeps you full until lunch.

  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana (about 120g)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, granola or chopped peanuts, dash of cinnamon

Instructions

  1. Mash the banana in a jar or container until mostly smooth.
  2. Add the milk, peanut butter, maple syrup (if using), and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Stir in the rolled oats, chia seeds, and a pinch of salt. Mix until well combined and the oats are submerged.
  4. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk to loosen.
  6. Add desired toppings and serve cold.

Notes

Use a very ripe banana for natural sweetness. If using a less ripe banana, add the sweetener. Don’t overfill the jar; leave at least an inch of space for expansion. Stir the oats about an hour after refrigerating to distribute chia seeds evenly. For a thicker texture, add more chia seeds; for a thinner texture, add more milk.
