These creamy, protein-packed overnight oats taste like dessert but are a healthy, grab-and-go breakfast. With just five minutes of prep, you’ll have a delicious and satisfying meal ready when you wake up.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice (e.g., unsweetened almond milk)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons (32g) creamy peanut butter (natural, no-stir)
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (15g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • Pinch of salt
  • Optional toppings: sliced banana, dark chocolate chips, extra peanut butter, crushed peanuts

Instructions

  1. In a mason jar or airtight container, combine 1/2 cup rolled oats, 1 scoop protein powder, 1 tablespoon chia seeds, and a pinch of salt. Stir to break up any clumps.
  2. Add 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons creamy peanut butter, and 1 tablespoon maple syrup. Do not stir yet.
  3. Mix thoroughly with a spoon or small whisk until completely combined, scraping the bottom and corners. The mixture should be thick and smooth.
  4. If the mixture is too thick, add another tablespoon or two of milk. It should be pourable but not watery.
  5. Seal the container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds if desired.
  7. Add toppings just before serving.

Notes

For best results, use rolled oats (not instant or steel-cut). The protein powder is key for the milkshake-like texture. If skipping protein powder, add an extra tablespoon of chia seeds and an extra tablespoon of peanut butter. Batch prep up to 5 days in advance; store toppings separately. Do not freeze.
