A quick and easy homemade fall drink featuring a creamy pumpkin spice cold foam latte with a smooth, velvety foam and balanced pumpkin spice syrup.

  • 1 cup granulated sugar (or brown sugar for a richer flavor)
  • 3 tablespoons canned pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1 cup cold milk (whole milk recommended for creaminess, or oat milk for dairy-free)
  • 1 tablespoon vanilla syrup or simple syrup (optional, adds sweetness)
  • 12 shots of espresso (about 2 ounces or 60 ml), or strong brewed coffee
  • Ice cubes

Instructions

  1. Make the Pumpkin Spice Syrup (about 15 minutes): In a small saucepan, combine the water and sugar over medium heat, stirring until the sugar dissolves. Add the pumpkin puree and spices (cinnamon, nutmeg, ginger, cloves). Stir well to combine and let it simmer gently for 8-10 minutes, stirring occasionally to avoid sticking.   2. Prepare the Espresso or Coffee (5 minutes): Brew 1-2 shots of espresso or about ½ cup (120 ml) of very strong coffee. Pour into your serving glass over ice cubes to chill.
  3. Make the Cold Foam (3-5 minutes): Pour 1 cup of cold milk into your frothing pitcher or jar. Add vanilla syrup if using. Froth the milk with a handheld frother until thick and airy — this usually takes about 30-45 seconds. The foam should be light, creamy, and hold its shape. If you’re shaking the milk in a jar, shake vigorously until the milk froths up, then let it settle for a moment to separate foam from liquid.
  4. Assemble the Latte (2 minutes): Spoon or pour about 2-3 tablespoons of the pumpkin spice syrup over the iced espresso. Gently layer the cold foam on top, filling the glass. For a finishing touch, sprinkle a pinch of cinnamon or pumpkin pie spice on the foam.

Notes

If pumpkin syrup is too thick, dilute with warm water before adding to latte. Use very cold milk for best cold foam results. Store pumpkin spice syrup in airtight container in fridge up to two weeks. Cold foam is best fresh but can be refrigerated for a few hours and whisked before use. For vegan version, use oat or almond milk and coconut sugar.
