  • 3 cups kale, stems removed and leaves chopped
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage (casings removed) and break it apart. Cook until browned and crumbled, about 5 minutes. Transfer sausage to a plate with a slotted spoon; do not drain fat.
  2. Sauté aromatics: Reduce heat to medium. Add diced onion and cook until softened, about 3 minutes, scraping up browned bits. Add minced garlic and cook 30 seconds until fragrant.
  3. Add potatoes and herbs: Stir in diced potatoes, dried rosemary, dried thyme, and red pepper flakes (if using). Cook 2 minutes, stirring to coat.
  4. Pour in broth: Add chicken broth and bring to a boil. Reduce heat to medium-low, cover, and simmer 15 minutes until potatoes are fork-tender.
  5. Add kale: Stir in chopped kale. Cook uncovered 5 minutes, stirring occasionally, until kale is wilted and tender.
  6. Return sausage and add cream: Stir cooked sausage back into pot. Reduce heat to low. Slowly pour in heavy cream while stirring gently. Warm through for 2 minutes; do not let boil.
  7. Season and serve: Taste and add salt and black pepper as needed. Ladle into bowls and serve hot with crusty bread or a side salad.

Notes

The soup will thicken as it sits. When reheating leftovers, add a splash of broth or milk to thin it back. For best results, add cream off the heat to prevent curdling. Kale stems can be finely chopped and sautéed with the onion for extra texture and nutrients.
