  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Prepare the chicken: If not using pre-cooked chicken, poach or bake about 2 large chicken breasts (approximately 12 oz raw), then shred finely using two forks. This should take about 15-20 minutes including cooling.
  2. Soften the cream cheese: Let the cream cheese sit at room temperature for 30 minutes or microwave in 15-second bursts until soft but not melted.
  3. Combine base ingredients: In a mixing bowl, add the softened cream cheese, buffalo sauce, ranch dressing, minced garlic, and black pepper. Stir until creamy and evenly mixed, about 1-2 minutes.
  4. Add chicken and cheeses: Fold in shredded chicken, blue cheese crumbles, and shredded cheddar cheese gently until well incorporated.
  5. Transfer to slow cooker: Spread the mixture evenly in the slow cooker insert. Cover with the lid.
  6. Cook low and slow: Set your slow cooker to low and cook for 2.5 to 3 hours. Stir once halfway through to prevent sticking and check texture.
  7. Check consistency and taste: After cooking, the dip should be bubbly, creamy, and thick enough to scoop. Adjust seasoning with more buffalo sauce or pepper if desired.
