A quick and easy one-pan meal featuring boneless skinless chicken breasts in a rich, creamy garlic sauce with sun-dried tomatoes and fresh spinach. Perfect for busy weeknights and cozy dinners.

  • 4 medium boneless skinless chicken breasts
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 tablespoon butter
  • 4 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes (oil-packed preferred)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning (divided)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium-high heat until shimmering but not smoking, about 2 minutes.
  3. Add chicken breasts to the pan and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil.
  4. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir often for 1-2 minutes until fragrant, being careful not to burn the garlic.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese and 1 teaspoon Italian seasoning. Let sauce thicken for 3-4 minutes, stirring frequently until it coats the back of a spoon.
  6. Add fresh baby spinach and stir until wilted, about 2 minutes.
  7. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Simmer for 2 more minutes to heat through and marry flavors.
  8. Taste sauce and adjust salt and pepper as needed. If sauce is too thick, stir in a splash of chicken broth or water to loosen.
  9. Serve chicken with plenty of creamy sauce spooned over. Great over pasta, mashed potatoes, or creamy cauliflower rice.

Notes

Dry chicken breasts well before searing to get a golden crust. Use medium-high heat for searing and medium heat for simmering the sauce to avoid burning garlic or curdling cream. If sauce thickens too quickly, add a splash of broth or water. Use tongs to flip chicken to keep it intact and juicy. Leftovers keep well refrigerated for up to 3 days; reheat gently with added liquid to loosen sauce. For dairy-free, substitute heavy cream with coconut cream and Parmesan with a dairy-free alternative.
