Crispy Air Fryer Chicken Wings with Garlic Parmesan

These air fryer chicken wings are perfectly crispy without deep frying, thanks to a parboil trick and a light cornstarch coating. Tossed in a savory garlic butter sauce with Parmesan, they’re an easy, crowd-pleasing appetizer or main.

  • 2 pounds chicken party wings (flats and drumettes separated)
  • 1 tablespoon kosher salt
  • 1 teaspoon baking powder (aluminum-free)
  • 1 teaspoon cornstarch
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup finely grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Fill a large pot with water and bring to a rolling boil. Add 1 tablespoon kosher salt. Carefully add chicken wings and boil for exactly 7 minutes. Transfer to a paper towel-lined sheet pan and let cool for 5 minutes.
  2. Pat each wing thoroughly dry with fresh paper towels. In a large bowl, whisk together baking powder, cornstarch, and black pepper. Add dried wings and toss until evenly coated. Let sit at room temperature for 10 minutes.
  3. Preheat air fryer to 400°F (200°C) for 3-5 minutes. Arrange wings in a single layer in the basket, leaving space between each. Cook in batches if needed.
  4. Air fry at 400°F for 12 minutes. Flip wings and cook for another 10-12 minutes until deep golden brown and blistered. Internal temperature should reach at least 175°F.
  5. While wings cook, melt butter in a small saucepan over medium-low heat. Add minced garlic and cook 1-2 minutes until fragrant and just golden. Remove from heat and stir in red pepper flakes if using.
  6. Transfer hot wings to a large bowl. Pour garlic butter over and toss to coat. Sprinkle Parmesan over and toss again. Add parsley and toss gently. Serve immediately.

Notes

Don’t skip the parboil—it’s key for crispy skin. Pat wings very dry after parboiling. Use aluminum-free baking powder to avoid metallic taste. Work in batches to avoid overcrowding. Flip wings halfway through cooking. Taste garlic butter before tossing; adjust garlic if needed.
