Instructions

  1. Preheat your air fryer to 375°F (190°C). If using an oven, preheat to 400°F (200°C).
  2. Prepare the jalapenos: Cut each jalapeno in half lengthwise. Use a small spoon to scrape out the seeds and white membranes. Wear gloves if sensitive to capsaicin.
  3. Make the filling: In a medium bowl, combine the shredded chicken, softened cream cheese, Buffalo sauce, ranch mix, and shredded cheddar. Mix until well combined and creamy. If using blue cheese, fold it in gently at the end. Taste and adjust seasoning.
  4. Set up your breading station: In the first shallow bowl, add the flour with a pinch of salt and pepper. In the second, beat the eggs until smooth. In the third, mix the panko breadcrumbs with garlic powder and paprika.
  5. Stuff the jalapenos: Spoon or pipe the filling into each jalapeno half, mounding it slightly. About a tablespoon per half is usually perfect.
  6. Bread the poppers: Working one at a time, dip each stuffed jalapeno first into the flour, shaking off any excess. Then dip into the beaten eggs, letting any extra drip off.
