Ingredients

Scale
  • Wonton wrappers (round)
  • 2 cups shredded cooked chicken (about 300g)
  • ½ cup softened cream cheese (120g)
  • ½ cup shredded cheddar cheese (50g)
  • ¼ cup buffalo sauce (60ml), e.g., Frank’s RedHot
  • Thinly sliced green onions
  • Ranch dressing for drizzling
  • Butter or cooking spray for greasing and brushing
  • Optional: pinch of garlic powder or smoked paprika
  • Optional: finely chopped celery
  • Optional: diced jalapeños for extra spice
  • Optional: pepper jack or mozzarella cheese as cheese alternatives
  • Optional: gluten-free wonton wrappers or small gluten-free tortilla cups for gluten-free version

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with butter or cooking spray.
  2. Press one wonton wrapper gently into each muffin cup, fitting snugly without tearing. Lightly brush wrappers with melted butter.
  3. Bake wonton wrappers for 8-10 minutes until golden and crisp. Watch closely to prevent burning.
  4. In a medium bowl, combine shredded chicken, softened cream cheese, shredded cheddar cheese, buffalo sauce, and optional garlic powder or smoked paprika. Mix until evenly combined. Adjust sauce for desired spice level.
  5. Fill each crispy wonton cup with the buffalo chicken mixture using a spoon, being careful not to overfill.
  6. Bake filled cups for 7-9 minutes until cheese melts and filling is heated through.
  7. Remove from oven and let cool for a couple of minutes. Drizzle ranch dressing over the top in a zigzag pattern.
  8. Garnish with sliced green onions or extra shredded cheddar if desired. Serve warm.
