  • 2 teaspoons everything bagel seasoning
  • Pinch of sea salt, to taste
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: Parmesan cheese for dusting
  • Optional: Smoked paprika
  • Optional: Garlic powder

Instructions

  1. Preheat the oven to 225°F (107°C). Allow 5-10 minutes for the oven to reach temperature.
  2. Slice the zucchinis into thin, even slices about 1/8 inch (3 mm) thick using a mandoline or sharp knife.
  3. Lay the slices on a clean kitchen towel or paper towels and gently pat dry to remove excess moisture.
  4. Place the zucchini slices in a large mixing bowl. Drizzle with olive oil and sprinkle everything bagel seasoning, black pepper, and sea salt. Toss gently to coat evenly.
  5. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Arrange the zucchini slices in a single layer without overlapping.
  6. Bake for 60-75 minutes, flipping the slices halfway through at about 35-40 minutes, until golden and crisp.
  7. Remove from oven and let the chips cool on the baking sheet for 10-15 minutes to crisp up further.
  8. Serve immediately or store in an airtight container once fully cooled.

Notes

Pat zucchini slices dry before baking to ensure crispiness. Bake low and slow at 225°F to avoid burning and achieve even crispness. Flip chips halfway through baking. If chips are soft after cooling, reheat at 250°F for 5-10 minutes. Avoid overcrowding the baking sheet to prevent steaming.
