  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp Italian seasoning (optional)
  • Olive oil spray for coating

Instructions

  1. Grate 2 medium zucchinis (about 2 cups). Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove excess moisture (about ½ cup liquid).
  2. In a medium bowl, combine the drained zucchini, ½ cup finely grated Parmesan, 2 minced garlic cloves, 1 large egg, ¼ cup all-purpose flour, ½ tsp salt, ¼ tsp black pepper, and 1 tsp Italian seasoning (if using). Stir until evenly mixed and the batter holds together when pressed.
  3. Preheat the air fryer to 375°F (190°C) while forming the fritters.
  4. Scoop about 2 tablespoons (30g) of batter per fritter and shape into small patties about 3 inches in diameter and ½ inch thick. Do not press too hard.
  5. Lightly spray the air fryer basket with olive oil spray. Place fritters in a single layer without crowding. Spray the tops lightly with oil as well.
  6. Cook in the air fryer for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove fritters and let rest briefly on a paper towel-lined plate to absorb excess oil. Serve warm.

Squeeze out as much moisture as possible from the zucchini to ensure crispiness. If batter feels loose, add an extra tablespoon of flour. Flip fritters halfway through cooking for even crispness.
