  • ½ teaspoon smoked paprika
  • 1 teaspoon hot sauce or chipotle powder (optional)
  • Lettuce or shredded cabbage (optional)
  • Cheese such as cheddar slice or crumbled queso fresco (optional)

Instructions

  1. Pickle the Onions: Thinly slice 1 medium red onion. In a small bowl or jar, combine ½ cup white vinegar, 1 tablespoon sugar, and 1 teaspoon salt. Add the onions, stir or shake well, and let sit at room temperature for at least 10 minutes. For best flavor, refrigerate overnight.
  2. Prepare the Special Sauce: In a mixing bowl, combine ½ cup mayonnaise, 1 teaspoon garlic powder (or 1 minced garlic clove), ½ teaspoon smoked paprika, and 1 teaspoon hot sauce or chipotle powder (adjust to taste). Stir until smooth and chill until ready to use.
  3. Form the Beef Balls: Divide 1 pound ground beef into 6 equal portions (about ¾ inch balls). Handle gently to keep meat tender.
  4. Heat the Skillet: Place a cast iron skillet over medium-high heat. Add 1 tablespoon vegetable oil or clarified butter and heat until shimmering but not smoking.
  5. Smash and Cook the Patties: Place 2 beef balls in the hot skillet, leaving space between them. Using a spatula, press each ball firmly into a thin patty about ¼ inch thick. Cook undisturbed for 3 minutes until crispy edges form. Flip and cook another 2-3 minutes until cooked through. Repeat with remaining beef balls.
  6. Warm the Tortillas: While patties cook, warm tortillas in a dry skillet or microwave until soft and pliable.
  7. Assemble the Tacos: Place a crispy smash burger patty on each tortilla. Top with pickled onions and a drizzle of special sauce. Add shredded lettuce or cheese if desired.

Notes

Do not overcrowd the pan when smashing patties to maintain high heat and crispy edges. Press firmly but only once to avoid tough patties. Keep beef cold until cooking to prevent falling apart. Pickled onions can be made ahead and stored up to one week. Reheat patties in a hot skillet to regain crispiness; avoid microwaving alone.
