  • 6 slices cheddar cheese, thinly sliced
  • 6 small corn or flour tortillas
  • 1 medium red onion, thinly sliced
  • ½ cup (120 ml) apple cider vinegar
  • ½ cup (120 ml) water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Mayonnaise, for spreading inside tortillas
  • Optional toppings: sliced pickles, shredded lettuce, hot sauce

Instructions

  1. Pickle the onions: Thinly slice 1 medium red onion and place in a jar. In a bowl, combine ½ cup apple cider vinegar, ½ cup water, 1 tablespoon sugar, and 1 teaspoon salt. Stir until dissolved, pour over onions, seal jar, and refrigerate at least 30 minutes.
  2. Prepare the patties: Divide ground beef into 6 equal portions (about 2.5 ounces each). Form loose balls without overworking. Season with salt and pepper just before cooking.
  3. Heat skillet: Preheat cast iron skillet over medium-high heat until smoking hot.
  4. Cook patties: Place a beef ball in skillet, immediately press down firmly with spatula to about ¼ inch thick. Hold pressure for 10 seconds. Cook 2-3 minutes until edges are crispy and brown. Flip, add a slice of cheddar cheese, cook another 2 minutes until cheese melts and burger is cooked through.
  5. Warm tortillas: Use tongs to warm tortillas briefly on skillet or over open flame until pliable and slightly charred at edges.
  6. Assemble tacos: Spread mayonnaise on each tortilla. Place a crispy smash burger patty on top, add a generous heap of pickled onions, and optional toppings like pickles or hot sauce.
  7. Serve immediately while warm, crispy, and melty.

Notes

Preheat skillet until very hot for best crust. Press patties thin immediately after placing in pan and hold pressure. Salt patties just before cooking to keep juicy. Pickled onions taste better after a few hours or overnight. Avoid crowding pan to maintain crispiness. Warm tortillas briefly to prevent sogginess.
