A simple and flavorful crockpot recipe featuring tender chicken breasts cooked in tangy, slightly spicy salsa verde and taco seasoning. Perfect for easy weeknight dinners with minimal prep.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup salsa verde (store-bought or homemade, preferably chunky)
  • 1 packet (about 1 oz or 28 g) taco seasoning (or homemade blend of cumin, chili powder, garlic powder, onion powder, and oregano)

Instructions

  1. Trim any excess fat from the chicken breasts and pat dry with paper towels.
  2. Place the chicken breasts in the bottom of the crockpot.
  3. Pour 1 cup of salsa verde evenly over the chicken.
  4. Sprinkle 1 packet of taco seasoning on top of the chicken and salsa.
  5. Cover and cook on low heat for 4 to 5 hours until the chicken is tender enough to shred easily.
  6. Using two forks or tongs, shred the chicken directly in the crockpot and mix with the salsa verde sauce.
  7. Stir the shredded chicken well. Optionally, squeeze fresh lime juice or add chopped cilantro for extra zest. Adjust seasoning if needed.
  8. Serve warm over tortillas, rice, or with your favorite sides.

Notes

Use fresh chicken breasts for best texture. Avoid watery salsa verde to prevent sogginess. Shred chicken gently to avoid mushiness. Optionally add fresh lime juice or cilantro after cooking. For a spicier dish, add jalapeños or chipotle in adobo. Can substitute chicken thighs for richer flavor. Leftovers keep well refrigerated for up to 4 days or frozen for 3 months.
