Instructions

  1. Pop the popcorn: If using kernels, pop them using your preferred method (air popper, stovetop, or microwave). You need about 8 cups of popped popcorn. Remove any unpopped kernels.
  2. Prepare your pan: Line a large baking sheet with parchment paper or a silicone baking mat. Set it aside.
  3. Combine popcorn and candy corn: In a large mixing bowl, gently toss the popped popcorn with 1 cup of the candy corn. Reserve the remaining ½ cup for topping later. Be gentle—you don’t want to crush the popcorn.
  4. Melt the white chocolate: Place the white chocolate wafers or chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly after each, until completely smooth. If the chocolate seems too thick, stir in the coconut oil or shortening. This usually takes about 1-2 minutes total. Warning: White chocolate burns easily, so don’t walk away.
  5. Coat the mixture: Pour the melted white chocolate over the popcorn and candy corn mixture. Using a spatula, gently fold everything together until the popcorn and candy corn are evenly coated. It won’t look perfect—that’s okay.
  6. Spread on the pan: Transfer the coated mixture to the prepared baking sheet. Spread it into an even layer, about ½ to ¾ inch thick. Don’t press too hard—you want some texture and air pockets.
  7. Add toppings: Immediately sprinkle the reserved ½ cup candy corn over the top, pressing gently so they stick. If using nuts or dried fruit, add them now. Finish with a light sprinkle of flaky sea salt.
  8. Set the bark: Let the bark sit at room temperature for about 30 minutes, or until the white chocolate is completely set. If you’re in a hurry, pop it in the refrigerator for 15 minutes.
