These Easy Candy Corn Sugar Cookie Bars are a quick and delicious fall dessert made with simple ingredients. The candy corn melts into sweet, jammy pockets, creating a perfect cross between a soft sugar cookie and a chewy blondie.

  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups (about 225g) candy corn

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 3 minutes.
  3. Add the room-temperature egg and vanilla extract. Beat on medium speed until fully combined, about 30 seconds.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Add the flour mixture to the butter mixture in two additions, mixing on low speed just until the flour disappears. The dough will be thick and slightly sticky.
  6. Transfer the dough to the prepared pan and press it into an even layer using a spatula or your hands.
  7. Gently press the candy corn into the top of the dough in a single layer, leaving about half of each piece exposed.
  8. Bake for 22-26 minutes. The edges should be lightly golden and the center should look slightly underdone and puffy.
  9. Cool the pan on a wire rack for at least 30 minutes. Then lift the block out using the parchment sling and let it cool completely, another 30-45 minutes.
  10. Cut into 16 squares (4×4 grid) using a sharp knife, wiping the knife clean between slices. Serve at room temperature.

Notes

Don’t overmix the dough to avoid tough bars. Press candy corn into the top of the dough, not mixed in, to prevent sinking. Start checking for doneness at 22 minutes; the center should look slightly underdone. Cool completely before cutting for clean edges. Bars taste even better the next day.
