A quick and indulgent pull-apart bread loaded with crispy bacon, sharp cheddar, mozzarella, and tangy ranch flavor. Perfect for parties, game day, or any gathering where you want a crowd-pleasing appetizer that disappears in minutes.

Ingredients

Scale
  • 1 large loaf sourdough bread (or French bread, about 16 ounces)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 6 strips bacon, cooked and crumbled
  • 1/2 cup unsalted butter, melted
  • 1 packet (1 ounce) ranch seasoning mix
  • 2 tablespoons fresh chives or green onions, chopped
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper or lightly grease a cast iron skillet.
  2. Cook the bacon until crispy. In a skillet over medium heat, cook the bacon strips for about 6-8 minutes, flipping once, until deep golden brown and crispy. Transfer to a paper towel-lined plate to drain. Once cool enough to handle, crumble into small pieces.
  3. Cut the bread into a grid pattern. Place the loaf on your work surface. Using a sharp bread knife, make diagonal cuts about 1.5 inches apart, cutting almost all the way through but leaving the bottom crust intact. Rotate the loaf and make diagonal cuts in the opposite direction, creating a diamond or square grid pattern.
  4. Mix the ranch butter. In a small bowl, combine the melted butter with the entire packet of ranch seasoning mix. Stir until completely combined.
  5. Stuff the bread with cheese and bacon. Gently pry open each cut in the bread. Using your fingers or a small spoon, tuck shredded cheddar and mozzarella into every crevice. Sprinkle about half of the crumbled bacon into the cuts as well, reserving the rest for the top.
  6. Brush with ranch butter. Using a pastry brush or spoon, drizzle and brush the ranch butter mixture all over the top and sides of the bread, making sure it seeps down into the cuts.
  7. Top with remaining cheese and bacon. Sprinkle the remaining shredded cheese over the top of the loaf, followed by the rest of the crumbled bacon.
  8. Bake for 15 minutes. Place the bread on your prepared baking sheet or in the cast iron skillet. Bake for 15 minutes, until the cheese is melted and bubbly and the edges of the bread are turning golden brown.
  9. Tent with foil and bake for another 5-7 minutes. If the top is browning too quickly, loosely cover the bread with aluminum foil for the remaining bake time.
  10. Rest for 2-3 minutes before serving. Sprinkle with fresh chives and parsley right before serving.

Notes

Don’t cut all the way through the bread—leave about half an inch of the bottom crust intact to prevent filling from leaking. Use room temperature cheese for even melting. Watch the oven after the 15-minute mark to prevent over-browning. For extra flavor, brush the bread with a tablespoon of bacon grease before adding the butter mixture.
