Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, all-purpose flour, baking powder, ground cinnamon, and salt. Stir well.
  3. In a separate bowl, beat softened unsalted butter with brown sugar and granulated sugar until light and fluffy (3-4 minutes).
  4. Beat in the large egg and vanilla extract until smooth and creamy.
  5. Gradually mix the dry ingredients into the wet ingredients, folding gently with a spatula. Stop mixing once flour disappears to avoid tough cookies.
  6. Fold in the diced apple and any optional nuts or dried fruit.
