Easy Crispy Baked Parmesan Chicken Tenders Recipe

These easy crispy baked Parmesan chicken tenders are crunchy, salty, cheesy, and satisfying without the mess of deep frying. Ready in about 30 minutes, they’re perfect for weeknight dinners, game day snacks, or party appetizers.

  • 1.5 lbs (about 680g) chicken tenders (or boneless, skinless chicken breasts cut into strips)
  • 1 cup (about 100g) panko breadcrumbs
  • 1 cup (about 100g) grated Parmesan cheese (preferably freshly grated Parmigiano-Reggiano)
  • 2 large eggs, at room temperature
  • 1/2 cup (about 60g) all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Olive oil spray or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack on top of a baking sheet and set aside.
  2. If using whole chicken breasts, slice them into strips about 1-inch thick. Pat the strips dry with paper towels.
  3. Set up your breading station with three shallow bowls. In the first bowl, whisk together the flour, garlic powder, paprika, salt, and black pepper. In the second bowl, beat the eggs until smooth. In the third bowl, combine the panko breadcrumbs and grated Parmesan cheese.
  4. Take one chicken strip and dredge it in the flour mixture, shaking off any excess. Then dip it into the beaten eggs, letting the excess drip off. Finally, press it into the panko-Parmesan mixture, making sure all sides are well coated. Place the coated strip on the wire rack. Repeat with all the chicken strips, leaving space between each piece.
  5. Lightly mist the tops of the coated tenders with olive oil spray or cooking spray.
  6. Bake for 15-18 minutes, until golden brown and cooked through (internal temperature should reach 165°F / 74°C). If not using a wire rack, flip the tenders halfway through.
  7. Remove from the oven and let the tenders rest on the wire rack for 2-3 minutes before serving.

Notes

For extra crispiness, use a wire rack. If you don’t have one, flip the tenders halfway through baking. If the coating isn’t browning enough in the last few minutes, turn on the broiler for 1-2 minutes, watching closely. Let the tenders rest after baking to set the coating.
