Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, lemon juice and zest, minced garlic, dried oregano, salt, pepper, and red pepper flakes if using. Whisk until well combined.
  3. Add halved baby potatoes to the marinade and stir until evenly coated. Spread potatoes in a single layer on a prepared sheet pan.
  4. Place the chicken thighs in the remaining marinade, turning each piece to coat well.
  5. Nestle the chicken thighs skin-side up among the potatoes on the sheet pan, leaving space between pieces for air circulation.
  6. Roast in the oven for about 35 minutes. After 20 minutes, gently toss the potatoes with tongs or a spatula to promote even browning, keeping chicken skin facing up.
  7. Switch the oven to broil for the last 3-5 minutes to crisp the chicken skin, watching carefully to avoid burning. Ensure chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from oven and let chicken rest for 5 minutes.
  9. Sprinkle chopped fresh parsley over the chicken and potatoes before serving.
