  • 2 tablespoons powdered sugar (optional, for dusting cherries)
  • 1 tablespoon unsalted butter
  • Pinch of sea salt (optional)

Instructions

  1. Rinse 1 pound (450g) fresh cherries and pat them completely dry with paper towels. Remove any damaged stems but keep most stems intact for easier dipping. (10 minutes)
  2. Optionally, toss cherries in 2 tablespoons powdered sugar to help chocolate adhere better and reduce moisture. Shake off excess sugar. (2 minutes)
  3. In a double boiler, gently melt 12 oz (340g) semi-sweet or dark chocolate with 1 tablespoon unsalted butter until smooth and glossy. Stir frequently to prevent burning. Remove from heat before completely melted, then stir to finish melting. (8-10 minutes)
  4. Stir in 1 teaspoon almond extract and 1 tablespoon cherry liqueur (if using) into the melted chocolate. (1 minute)
  5. Holding a cherry by the stem, dip it into the melted chocolate, swirling to coat evenly. Let excess chocolate drip off. Place the dipped cherry on a parchment-lined baking sheet. Repeat for all cherries. (15 minutes)
  6. Sprinkle a tiny pinch of sea salt on each cherry while chocolate is still wet, if desired. Let the chocolate set at room temperature for about 30 minutes or refrigerate for 15 minutes to speed up setting. Avoid stacking cherries until fully set. (15-30 minutes)
