  • 2 cups peeled, pitted, and chopped peaches (about 4 medium peaches)
  • 1 cup granulated sugar (200 grams)
  • 3 tablespoons Ball® RealFruit Instant Clear Jel
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1/4 cup water (60 ml) to dissolve the clear jel

Instructions

  1. Prepare the peaches by peeling and pitting them. For quick peeling, blanch in boiling water for 30 seconds, then plunge into ice water. Chop into 1/2 inch pieces and place in a mixing bowl.
  2. Sprinkle granulated sugar over the peaches. Gently mash the fruit and sugar together with a potato masher or fork until juicy and slightly chunky. Let sit for 10-15 minutes to draw out juices.
  3. Whisk the Ball® RealFruit Instant Clear Jel with 1/4 cup cold water until smooth to avoid lumps.
  4. Pour the clear jel mixture and fresh lemon juice into the peaches. Stir gently but thoroughly until fully combined and thickened.
  5. Spoon the jam into clean, freezer-safe jars or containers, leaving about 1/2 inch headspace. Seal tightly.
  6. Freeze jars for at least 24 hours to set. Thaw in the refrigerator overnight or at room temperature for a few hours before serving.

Notes

Use ripe but firm peaches to avoid watery or mushy jam. Work quickly once clear jel is added as the jam thickens fast. Label jars with date and use within 6 months frozen. Thaw jam gently for best texture. If jam is too runny after thawing, stir in more clear jel dissolved in cold water and refreeze.
