Easy Fresh Smoked Salmon Cucumber Bites

A quick and elegant appetizer featuring crisp cucumber slices topped with smoky smoked salmon and a creamy dill-lemon spread, perfect for parties and last-minute guests.

  • 1 fresh cucumber (preferably English cucumber)
  • 4 ounces smoked salmon, thinly sliced
  • 4 ounces cream cheese, softened
  • 1 tablespoon fresh dill, finely chopped
  • Juice of half a lemon
  • 1 teaspoon capers (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Rinse the cucumber and slice into 1/4-inch thick rounds. Optionally peel partially or fully. Lay slices on paper towels to absorb excess moisture.
  2. In a mixing bowl, combine softened cream cheese, chopped dill, and lemon juice. Mix until smooth. Add sea salt and black pepper to taste. If too stiff, add a teaspoon of cold water or milk to loosen.
  3. Spread about 1 teaspoon of the cream cheese mixture onto each cucumber slice using a spoon or piping bag.
  4. Tear or cut smoked salmon into bite-sized pieces (~1 inch squares) and place one piece on each cream cheese-topped cucumber slice.
  5. Optionally, sprinkle capers over the salmon and garnish with a small sprig of dill and a crack of black pepper.
  6. Refrigerate assembled bites for 10–15 minutes before serving to meld flavors and keep crisp.

Notes

Pat cucumber slices dry to avoid sogginess. Use softened cream cheese for easy spreading. Assemble close to serving time for best texture. Variations include swapping cream cheese for dairy-free options or whipped ricotta, and smoked salmon for smoked tofu for a vegan version.
