  • 12 slider buns (brioche or Hawaiian rolls)
  • 1 cup beer (lager or pilsner)
  • 2 tablespoons yellow mustard seeds
  • 1 tablespoon mustard powder
  • 1 tablespoon honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional toppings: sauerkraut, sliced pickles, caramelized onions, shredded lettuce

Instructions

  1. Make the beer mustard: In a small saucepan, combine 1 cup beer, 2 tablespoons yellow mustard seeds, 1 tablespoon mustard powder, 1 tablespoon honey, and 2 tablespoons apple cider vinegar. Whisk until smooth. Bring to a gentle simmer over medium heat and cook for 8-10 minutes, stirring occasionally, until thickened slightly. Remove from heat and set aside.
  2. Preheat grill to medium-high heat (about 400°F).
  3. Slice each bratwurst link in half lengthwise. Season cut sides lightly with salt and pepper.
  4. Grill brat halves cut-side down for 4-5 minutes without moving. Flip and cook for another 3-4 minutes on the skin side until internal temperature reaches 160°F.
  5. While brats cook, melt 2 tablespoons butter. Split slider buns and brush cut sides with melted butter. Toast buns cut-side down on the grill for 1-2 minutes until golden.
  6. Assemble sliders: Place each grilled brat half on a toasted bun bottom. Spoon about 1 teaspoon beer mustard over each. Add optional toppings if desired. Top with bun top.
  7. Serve immediately while warm.

Notes

For best results, slice brats while cold. Don’t overcrowd the grill to ensure proper searing. The beer mustard can be made a day ahead for better flavor. To prevent sogginess, toast the buns and assemble just before serving.
