This quick kielbasa and white bean soup is the kind of meal that feels like it’s been in your family for generations, but it comes together in about 30 minutes. It’s a weeknight lifesaver with simple ingredients and big flavor.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into ½-inch rounds
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 bay leaf
  • Optional: 1 cup chopped kale or spinach
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the oil: Place your pot over medium-high heat and add the olive oil. Let it shimmer for about 30 seconds.
  2. Sear the kielbasa: Add the sliced sausage in a single layer (work in batches if needed). Let it cook undisturbed for 3-4 minutes until the bottoms are deeply browned and crisp. Flip each piece and cook another 2 minutes. Use a slotted spoon to transfer the sausage to a plate and set aside.
  3. Cook the aromatics: Reduce the heat to medium. Add the diced onion to the pot. Sauté for 4-5 minutes, stirring occasionally, until the onion is soft and translucent. Scrape up any browned bits from the bottom.
  4. Add the garlic: Stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Build the broth: Pour in the chicken broth, scraping the bottom of the pot with your wooden spoon to release any stuck-on bits. Add the drained white beans, dried thyme, smoked paprika, bay leaf, and a pinch of salt and pepper. Stir everything together.
  6. Simmer: Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 10 minutes. If you’re adding kale or spinach, stir it in during the last 2 minutes of simmering.
  7. Return the sausage: Add the seared kielbasa back into the pot. Stir and let it cook for another 2-3 minutes to warm through. Taste the broth and adjust the seasoning.
  8. Finish and serve: Remove the bay leaf. Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or a simple side salad.

Notes

Don’t rush the sear on the kielbasa—it adds deep flavor. Watch the salt, as kielbasa and canned beans are already salty. For a thicker soup, mash about ½ cup of the beans before adding. The soup tastes even better the next day.
