  • 1 cup (120 g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 4 ounces (115 g) cream cheese, softened
  • Fresh strawberries, hulled and sliced
  • Fresh blueberries
  • Fresh raspberries or blackberries (optional)
  • 1 cup (90 g) graham cracker crumbs or crushed digestive biscuits
  • Chopped toasted almonds or pecans (optional)

Instructions

  1. Rinse all the berries gently and pat dry with paper towels. Hull and slice the strawberries, then combine all the berries in a bowl. If strawberries are tart, sprinkle a teaspoon of sugar over the mix to macerate and sweeten. Set aside.
  2. In a chilled mixing bowl, beat 1 cup (240 ml) of heavy whipping cream until soft peaks form.
  3. In a separate bowl, mix 4 ounces (115 g) of softened cream cheese with 1 cup (120 g) powdered sugar and 1 teaspoon pure vanilla extract until smooth.
  4. Carefully fold the whipped cream into the cream cheese mixture, keeping the texture light and airy to create silky vanilla cream.
  5. Crush about 1 cup (90 g) of graham crackers into crumbs. Optionally, toast chopped nuts lightly in a dry pan for 3-4 minutes for added flavor.
  6. Assemble the parfait cups by spooning 1-2 tablespoons of graham cracker crumbs into the bottom of each cup, followed by 2-3 tablespoons of vanilla cream, then a layer of mixed berries. Repeat layers until nearly full, finishing with berries on top.
  7. Chill the parfait cups in the refrigerator for at least 1 hour before serving to let flavors meld and cream set.
