  • 1 teaspoon vanilla extract
  • ¼ cup (40g) mini chocolate chips (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, stir together rolled oats, ground flaxseed, and salt. Add chia seeds if using.
  2. Add peanut butter, honey, and vanilla extract to the dry ingredients. Stir until the mixture is uniform and sticky. Adjust moisture by adding a teaspoon of water or extra honey if too dry, or more oats if too wet.
  3. Fold in mini chocolate chips or preferred add-ins like dried fruit or nuts.
  4. Chill the mixture in the refrigerator for about 10 minutes to firm up.
  5. Roll the mixture into 1-inch balls using your hands, wetting them slightly if the mixture sticks. You should get about 15-18 balls.
  6. Place the balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to set.
  7. Store in an airtight container in the fridge for up to one week or freeze for longer storage.
