  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your loaf pan with parchment paper, leaving some overhang on the long sides for easy lifting. Lightly grease the parchment if desired.
  2. Mash the bananas in your mixing bowl with a fork or potato masher until smooth. A few small lumps are fine.
  3. Add the melted butter and granulated sugar to the mashed bananas. Stir until well combined.
  4. Add the egg and vanilla extract. Stir vigorously until the mixture is smooth and uniform.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently until just combined; a few streaks of flour are okay.
  6. Fold in ¾ cup of the chocolate chips with a few gentle strokes. Reserve the remaining ¼ cup for topping.
  7. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the reserved chocolate chips on top.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with aluminum foil.
  9. Cool in the pan for 10 minutes on a wire rack.
  10. Use the parchment overhang to lift the bread out of the pan. Transfer to the wire rack and cool completely before slicing, about 1 hour.
