Easy One-Bowl Brown Butter Banana Bread

  • 3 medium ripe bananas, mashed
  • 6 tablespoons (85 grams) unsalted butter, browned
  • 3/4 cup (150 grams) granulated sugar
  • 1/4 cup (50 grams) brown sugar
  • 2 large eggs, room temperature
  • 1 3/4 cups (220 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup (60 grams) chopped walnuts or pecans
  • Optional: 1/2 cup (90 grams) chocolate chips

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the butter. Stir continuously as it foams and turns golden brown, about 4-5 minutes. Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
  3. In a large mixing bowl, combine granulated sugar and brown sugar. Add eggs and whisk until smooth and slightly pale, about 1-2 minutes.
  4. Stir in mashed bananas and vanilla extract gently.
  5. Slowly pour in the cooled brown butter and mix until combined.
  6. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold dry ingredients into wet mixture until just combined; a few lumps are okay.
  7. Fold in optional nuts or chocolate chips if using.
  8. Spoon batter into prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if top browns too quickly.
  10. Cool in pan on a wire rack for 15 minutes, then remove bread using parchment and cool completely before slicing.

Notes

Use very ripe bananas for best sweetness. Stir brown butter constantly to avoid burning. Avoid overmixing batter to keep bread tender. Tent with foil if top browns too fast. For gluten-free, substitute flour with almond flour. For vegan, use flax eggs and plant-based butter.
