Easy One-Pot Lemon Herb Chicken and Rice

A quick and fuss-free one-pot meal featuring crispy chicken thighs, fragrant herbs, and fluffy lemon-infused rice, perfect for cozy dinners.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 1/2 cups long-grain white rice (jasmine or basmati preferred)
  • 3 cups chicken broth
  • 1 fresh lemon (zest and juice)
  • 2 tablespoons fresh thyme, chopped (divided)
  • 2 tablespoons fresh parsley, chopped
  • 3 cloves garlic, minced
  • 23 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: splash of white wine

Instructions

  1. Pat the chicken thighs dry with paper towels. Mince the garlic, zest and juice the lemon, and chop the fresh herbs. Measure out the rice and broth.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large skillet. Season chicken with salt and pepper. Place skin side down and cook 5-7 minutes until golden and crispy. Flip and cook 3-4 minutes more. Remove chicken and set aside.
  3. Lower heat to medium, add more olive oil if needed, and sauté minced garlic for about 30 seconds until fragrant.
  4. Add rice to the skillet and stir to coat in oil and garlic. Toast rice for 1-2 minutes until edges look slightly translucent.
  5. Pour in chicken broth, add half the chopped thyme, and a pinch of salt and pepper. Stir gently to combine.
  6. Nestle browned chicken thighs skin side up into the rice mixture.
  7. Bring to a gentle boil, then reduce heat to low and cover with a lid. Simmer undisturbed for 25-30 minutes until rice is tender and chicken reaches 165°F (74°C).
  8. Remove from heat, squeeze fresh lemon juice over the dish, and sprinkle remaining thyme and parsley. Let rest covered for 5 minutes.
  9. Serve warm, adjust seasoning if needed, and enjoy.

Notes

Pat chicken dry for crispy skin. Do not lift lid while simmering to ensure rice cooks evenly. If liquid evaporates too fast, add warm broth or water. Adjust cooking time if using boneless chicken breasts. Fresh herbs preferred but dried thyme can be used at one-third the amount.
