  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground nutmeg, plus more for topping
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted (for greasing and drizzling)
  • Maple syrup for serving (optional)

Instructions

  1. Prepare the bread: Cut brioche into 1-inch cubes. Spread on a baking sheet and let sit out for about 30 minutes to dry slightly.
  2. Make the custard: In a large mixing bowl, whisk together eggs until frothy, about 30 seconds. Add eggnog, heavy cream, sugar, vanilla, nutmeg, and cinnamon. Whisk until smooth and sugar is dissolved.
  3. Assemble the casserole: Grease a 9×13-inch baking dish with melted butter. Spread bread cubes evenly in dish. Pour custard over bread, pressing gently with a spatula to submerge as much as possible.
  4. Soak overnight: Cover dish tightly with plastic wrap or foil. Refrigerate for at least 6 hours, ideally 8-12 hours.
  5. Bake: Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit 15-20 minutes. Uncover, drizzle remaining melted butter over top, and sprinkle with extra nutmeg. Bake 40-45 minutes until top is golden brown and center is set but slightly jiggly.
