  • 1 cup old-fashioned rolled oats
  • ⅓ cup mini chocolate chips
  • ¼ cup ground flaxseed or chia seeds (optional)
  • ¼ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a medium mixing bowl until smooth with no large chunks.
  2. Add the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
  3. Mix in the rolled oats, ground flaxseed (if using), and a pinch of salt. Stir until evenly distributed. The mixture should be thick and slightly sticky.
  4. Fold in the mini chocolate chips gently until evenly distributed.
  5. Chill the dough in the refrigerator for 10-15 minutes (optional but recommended for easier rolling).
  6. Using a small cookie scoop or tablespoon, portion out the dough and roll into 1-inch balls (about 12-14 bites).
  7. Place the rolled bites on a parchment-lined baking sheet or plate.
  8. Refrigerate for at least 30 minutes to set before serving.

Notes

Use very ripe bananas for natural sweetness. If dough is too sticky, chill for 15-20 minutes or add more oats. If too dry, add a teaspoon of honey or milk. Wet hands with water or oil for easier rolling. Bites taste even better the next day as flavors meld.
