Instructions

  1. Prep Your Peaches (10 minutes): Peel, pit, and slice about 4 large fresh peaches into roughly 1/2-inch thick slices. Toss them gently in a bowl with 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/2 teaspoon ground cinnamon. Set aside to macerate while you prepare the topping.
  2. Make the Streusel (10 minutes): In a separate bowl, combine 3/4 cup rolled oats, 1/3 cup packed brown sugar, 1/3 cup all-purpose flour, and a pinch of salt. Stir in 1 teaspoon vanilla extract at the end.
